Some people say they don’t eat leftovers. Well, at our house they don’t know they are leftovers. Be creative and make it look like something else. They will never know. Here are a few tricks…..delicious and economical!!
Easy meal with leftover chicken breast sautéed with onion….
Flour tortilla
Shredded cheese
Fresh spinach leaves
In a large iron frying pan, sprayed with Pam, build your meal!
Start with one tortilla
Add light layer of shredded cheese
Cover with spinach leaves
Scatter sliced chicken and onions
Top with another layer of cheese
Top with another tortilla
Cook on medium heat as not to burn tortilla, but melting the cheese. Flip and brown other side. Flip out on a board or plate; cut with pizza cutter into wedges. Add fruit or sliced tomato. It’s great!!
I made this today when Troy was home and Rick was coming for lunch, and I had not been to the grocery store. It was great!! Tortillas don’t always have to be Mexican. This had a French feel to it. It was yummy!!
Easy Chicken Salad with leftover baked or rotisserie chicken…
Debone chicken and cut into chunks, remove skin
2 ribs of celery, chopped
½ onion, chopped
Enough mayonnaise and/or sour cream to bring it together
Check for salt and pepper…your chicken has already been seasoned.
Make a sandwich or a salad plate with salad greens, tomatoes and fruit. This won’t look like last night’s chicken. Before long your family won’t know what leftovers are. Have fun with your leftovers!!
