In the Kitchen with Elaine

Friends are remodeling our kitchen, so our house has been a mess since January. It’s looking great, just taking time. Our house looks like the hoarders….all the pots, dishes and other kitchen paraphernalia are in our dining and living rooms. So, needless to say, dinner is a little more complicated than usual!

As much as I love to cook, this situation has taken some of the joy of cooking out of my life. However, we still want to eat. So after rounding up what I’ll need to prepare the meal, it’s almost like a scavenger hunt…fun!! I’ve tried to keep menus simple and good. Try this simple dinner on your family.

Easy Chicken

3 tablespoons of vegetable oil

4 chicken breasts, sliced into pieces (dry with paper towel)

Salt and pepper

1 large onion, thinly sliced

½ cup white wine

Juice from ½ lemon

2 tablespoons butter

Heat oil in heavy bottom skillet. Place chicken in one layer and cook on medium high heat. As chicken edges begin to whiten, you can see a little pink, flip the chicken; the first side should be browned. Add onion slices and cook until onion is wilted; add lemon juice and wine (remove from heat to add wine…you may have fireworks if you don’t). Return to heat; cover and cook about 3 minutes. Add butter at the end; stir in to richen the sauce. Eat just like this or top with rice or pasta. It is quick and good!

Add salad or vegetable. Whether your kitchen is under construction or not, this is a great lunch or supper. Hope you enjoy!!
